Executive Chef, Graze
Chef Derek Lathan is a native to Charleston, who honed some of his culinary skills in other cities before returning to continue his career advancement in the Holy City. Some of his work in Williamsburg, VA, was at The Trellis alongside Death by Chocolate author & cook, Marcel Desaulniers. Lathan enjoyed forays through restaurants in Atlanta and St. Louis before returning to his home city. Gladly back & closer to family in the Lowcountry, Lathan applied his talents at some renowned area restaurants before teaming with Chef Michael Karkut and Bradford Bobbitt to form GRAZE. Today, about five years later, Lathan is proud of the success and expansion of Graze (with newest location in Summerville.) One of the things he most appreciates about GRAZE is providing a menu and talented crew that can appease any palate.
Chef Lathan delights in researching new recipe ideas and ingredients. When not working hard at the restaurant, this kitchen professional can be found exploring grocery isles and testing out new recipe ideas with his three-year-old daughter.
