Executive Chef, Amen St.
After eight years working his way from front-of-the-house positions as a bartender and then manager at popular bars and restaurants throughout the Holy City, Adam Miller decided it was time for change. Chef Miller brings his love and appreciation of fresh ingredients, sustainable seafood and local goodness to Amen Street Fish and Raw Bar.
His long time love of cooking, and his desire to try his hand in a professional kitchen led him to enroll in culinary school. At nearly 30 years old, he finally took his mother’s advice and began his education at the Art Institute of Charleston. While enrolled there, he captained the school’s ACF competition, leading his team to a bronze medal at the regional level and garnering the attention of his chef instructors. After graduating from AIC in 2012, his solid reputation allowed him to gain a position at Carolina’s Southern Bistro under chefs Jill Mathias and Juan Cassalett where he learned first-hand the skills it takes to thrive in a fast-paced kitchen. And thrive Adam did; after only a year at Carolina’s he was approached by Nathan Thurston, Executive Chef at Stars Rooftop & Grill Room, and one of Adam’s former instructors. Chef Thurston brought Adam on as Chef de Partie at Stars. He helped to open the restaurant from day one, and then stayed on to continue his real-world education and growth in the kitchen, manning Stars’ famous live fire grill lovingly nicknamed “Grates of Hell”. When Joe DiMaio stepped into the role of Executive Chef at Stars in 2013, Adam’s continued positive growth was rewarded and he was given the position of Sous Chef at the restaurant.
We’re excited to have Adam Miller join us at Amen Street Fish & Raw Bar as our new Executive Chef. We’re certain that his abundant talent and unique desire to continually learn will lead him to master this new role in no time, and we can’t wait to see what the future holds for him here at Amen Street!
